BUTTERNUT SQUASH SOUP
6 Cups butternut, peeled and cubed
4 cups water
4 chicken bouillon cubes (4 tsp.)
6 tbsp chopped onions
1 apple, peeled and chopped
4 tbsp butter
½ tsp marjoram (oregano)
½ tsp pepper
1/8 tsp salt
1/8 tsp cayenne
1 pkg cream cheese, softened
Saute onions in butter until tender. Add squash, water, apple and bouillon in pot and boil about 20 minutes until squash is tender. Add spices, and put in blender. Blend till smooth. Add cream cheese and blend some more. Reheat on stove if necessary; do not boil.
FRESH APPLE CAKE
Ingredients:
3 cups flour
2 cups sugar
½ tsp salt
½ tsp soda
3 eggs
1 cup oil
1 tsp vanilla
3 medium apples, peeled, cored and grated
1 medium apple, peeled, cored and coarsely chopped
Mix and sift together flour, sugar, salt, soda. Mix apples in to the dry mixture. Make a hole in center and pour in oil and well beaten eggs. Mix well and add vanilla. Bake in a greased and floured tube (Bundt) pan at 350 degrees for about an hour or until a toothpick comes clean. Allow to cool slightly and remove from pan.
EASY CARAMEL SAUCE
¾ CUP BROWN SUGAR
2 TBSP SOFT BUTTER
DASH OF SAT
½ CUP HOT CREAM OR EVAPORATED MILK
COMBINE IN BLENDER AND BLEND TIL SMOOTH. GREAT FOR ICE CREAM, CAKE, ETC.
